Protein Pancakes

Blending spinach in a mixer, that’s what my favorite colleague did years ago within the scope of science. We were always happy about the smell and color but unfortunately did not think of making a drink from it. Only recently, when the fancy ‘green smoothie’ trend started in the US, we tried making one in the kitchen. And what can I say: The green smoothie with spinach and fruit is not only really tasty, but also super healthy. Today we enjoyed it while we were having pancakes. Yes, we didn’t have Overnight Oats. But we can’t give up oats completely. That’s why we made the pancakes with oats and cottage cheese which is high in protein: American breakfast as its best. Small hint: Without the vanilla sugar and honey the dough can also be used for a savory version with cheese and bacon.

For two portions you need

  • 60 g rolled oats
  • 1 cup cottage cheese; 0,8% of fat (200 g)
  • 3 eggs
  • 1 tsp baking powder
  • 1 tsp vanilla sugar
  • 1 tsp honey
  • 1 pinch of salt
  • 1 tbsp butter or oil

Instructions

  1. Grind up the oats in a hand-held blender. Add baking powder, vanilla sugar, honey and cottage cheese and mix until it’s creamy. Add the eggs and stir them on a low level.
  2. Warm the oil over low heat and deep-fry the dough in small portions. Add 1 tbsp of dough to the pan and fry until it’s brown. They don’t need that much heat. Be careful to not let them scorch.
