Overnight Oats Coconut-Currant

Currants are like squats; you either love them or you hate them. There is nothing in between. Their taste is just too sour. But that’s their charm – and now you know: I love these little red pearls- which I cannot say about squats. Back to the appeal of their taste: Combined with sweet coconut milk, currants and curd cheese, they get an even better taste. It just fits. In addition, this combination is high in vitamin C (36 mg/100 g): Really useful when you live in a rainy city such as Hamburg. The curd cheese contains a lot of protein which will help me get through the Friday leg day workout and even the squats will get easier (I still don’t like them though).

For one portion you need

  • 5 tbsp rolled oats (50 g)
  • 50 ml coconut milk
  • 50 ml milk
  • 150 g low fat curd cheese (Greek Yogurt)
  • 125 g red currants

Instructions

  1. Mix coconut milk and milk in a jar and add the oats. Close jar and put in fridge overnight.
  2. In the morning, mix curd cheese and 100g of the currants and a little bit of water or milk. Then put on top of the oats. Finally, add the rest of the currants.
